The perfect addition to any holiday party from "Pomegranates & Prickly Pears"
Baked Brie with Garlic Fig Compote
Serves 12
1 large round Brie cheese
1 (8-oz) jar fig spread or fig preserves
1 tablespoon minced garlic
1 tablespoon balsamic vinegar or fig balsamic vinegar
Crusty Bread

Preheat over to 350 degrees. Cut brie horizontally into 2 equal portions. Combine the fig spread, garlic and vinegar in a bowl and mix well. Spread the fig mixture over the cut side of 1 of the brie halves and top with the remaining half cut side down. Place brie on baking sheet and surround with bread slices in a single layer. Bake for 10 minutes or until the brie is soft and the bread slices are light brown. Serve immediately. If fig spread or fig preserves are not available, process 6 dried California figs with a small amount of boiling water in a food processor until pureed.
